Dairy-free Vanilla Ice Cream Delight

Serves: 6 cups
Ingredients
  • 1 cup raw cashews, soaked 6-8 hours or overnight
  • 2 cans (14 ounce) full cream coconut milk
  • ½ cup water
  • 2 tablespoon vanilla extract
  • ½ cup maple syrup (for a low-carb version replace with ½ cup erythritol-based sweetener)
  • pinch of sea salt
Instructions
  1. Blend all above ingredients in a blender.
  2. Pour mixture into an ice-cream / sorbet maker and follow instructions.
