Mung Bean Hummus
Recipe type: Snack
  • 3 cups mung beans, pre-soaked and cooked
  • 1 cup almond or hemp milk
  • 2 TBSP Tahini
  • 4 TBSP Extra Virgin olive oil
  • 2 TBSP Tamari soy sauce or Coconut Aminos (liquid spice similar to soy sauce)
  • 2 TBSO lemon juice
  • ½ tsp cumin
  • 1 TBSP chili powder
  • sea salt and freshly ground black pepper to taste
  1. Purée in a blender or food processor until smooth and creamy. Serve with cut up veggies or crackers (whole grain, high fiber), or spread on sandwiches.
